1 stick butter (softened), 1/2 c. sugar, 1 large egg, 1 c. cocoa powder, 1/2 c. +2 T. flour, super fine powdered sugar for rolling out dough

Mint Filling
1/4 c. heavy cream, 6 oz. semi sweet chocolate (finely chopped), 3 drops oil of peppermint or 1/2 tsp. mint extract

Cream butter and sugar until smooth. Add egg and mix until fluffy. Add cocoa and flour, mix until well combined. Divide dough into 2 equal portions and chill for approximately 1 hour. Roll out dough on surface dusted well with super fine powdered sugar. Cut with approximately 2 in. round cutter. Bake at 350º for approximately 12 minutes. Cool completely.

Filling
Heat cream just to boiling point. Pour cream into chocolate and combine slowly until completely blended. Add mint. Spread over cooled cookie bottoms and add tops. Chill until filling is firm (10 - 15 minutes).

If super fine powdered sugar is not available, sifted regular powdered sugar will work as a substitute. After filled cookies are chilled, you may dip in melted chocolate and set aside until set. This is a yummy way to finish these cookies but they may be eaten as is.
