1 pack of Chicken Drumsticks (13 drumsticks per pack)
1/2 Yellow onion, chopped
1/2 Green bell pepper, chopped
1 tsp Black pepper
1 tsp Onion powder
1 tsp Garlic powder
2 tbsp Jerk seasoning
1 tsp Chili powder

For Gravy

3 tbsp Reserved pan drippings or butter
Sauté other half of yellow onion, chopped
Sauté other half of green bell pepper, chopped
1 ⅓ cup All-purpose flour
4 cups Unsalted Beef Broth
1/4 tsp Black pepper
1/4 tsp Onion powder
1/4 tsp Garlic powder
1 tbsp of Jerk Seasoning

Preheat oven to 400ºF (200ºC)
Prepare the chicken: Thoroughly wash and pat the drumsticks dry with a paper towel. This is a very important step for a good sear.
Season the flour: In a shallow dish or large, resealable bag, combine the 1⅓ cups of flour with the seasonings for the gravy.
Sear the chicken: Heat about 3 tablespoons of butter in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Working in batches, brown the drumsticks on all sides, about 3 to 4 minutes per side. The chicken does not need to be cooked through at this point. Remove the seared chicken and set it in the glass baking dish.
Baking time: Bake seared chicken in oven on 400ºF for 1 1/2 hour or until falling of the bone.
Build the gravy: Pour out any excess oil from the pot, leaving about 3 tablespoons of the flavorful pan drippings. If you have less, add a little butter.
Sauté the veggies: Add the chopped onion and chopped green bell pepper to the pot and sauté for 5 minutes until softened and translucent.
Create the roux: Sprinkle the reserved ⅓ cup of seasoned flour over the onion and green bell pepper. Whisk constantly for 2 to 3 minutes to cook the flour and create a blonde roux.
Whisk in the liquids: Gradually pour in the unsalted beef broth while whisking continuously to prevent lumps. Bring the mixture to a simmer.
Simmer and smother: Pour gravy on top of chicken in baking dish and continue to bake.
Finish and serve: Taste the gravy and adjust seasonings with previous seasonings, if needed. Serve your smothered chicken drumsticks hot, spooning plenty of gravy over the top. It pairs perfectly with rice, mashed potatoes, or collard greens.
