1 (20 oz.) can pineapple chucks, juice reserved
1/4 c. soy sauce
1/2 c. vinegar
3/4 c. brown sugar
1/4 c. all-purpose flour
1 1/2 green bell peppers, cut in about 1/2" chunks
1 c. celery, sliced
1 (8 oz.) can water chestnuts, drained and sliced
1 1/2 lb. chicken breasts, cooked

Heat pineapple liquid, soy sauce, vinegar and brown sugar in a large saucepan over medium low heat. Add flour and stir until thickened, then stir in bell pepper, celery and water chestnuts and simmer briefly. Stir in pineapple, then chicken; heat through and serve.
**Bell peppers and celery should be tender-crisp, but if you like it more tender than tender-crisp, you may choose to pre-cook them briefly before adding to thickened liquids above.
Serve with hot cooked white rice.
