Ham bones and roughly chopped ham scraps
3 carrots, roughly chopped
1 small onion, roughly chopped
3 stalks celery, diced and use leaves
2 bay leaves
5 whole cloves or Allspice berries

⅔ cup finely diced cleery
⅔ cup findely diced onion
˝ cup finely diced carrols
˝ finely diced turnip or rutabege
3 tablespoons butter
3 tablespoons flour

1 ˝ cups green split peas

Directions:

Chop up ham bones and bring to simmer with water on the stove. Simmer for 5 minutes. Add ham scraps and the carrots, onion and celery listed in first set of ingredients. Put the bay leaves and cloves in a cheesecloth, tie up and place in pot. Simmer all for 3 hours skimming off foam. When simmering done, strain all and remove the cheesecloth packet. (It isn't listed, but it sounds like you toss all the solids after straining). Return liquid to pot and keep on low heat. To make 2 quarts of pea soup, in a skillet, sauté all the vegetables listed in second section of ingredients in the butter for 5 minutes. Let cool for 2-3 minutes, stir in flour and let cook 2 minutes. Add this to the liquid, add the peas and bring to a simmer stirring occasionally for one hour. Add salt and pepper to taste. You can puree the solids if you want.

She did make this occasionally and you can tell it's old just from the way it's written. I can remember when we were younger and just hated pea soup! But if there's anyone who loves pea soup, I imagine it's a great recipe!
