1 tbsp butter
1 tbsp olive oil
i cup long grain or basmati rice
1 cup chicken stock or broth
1 cup tomato sauce
1½ tsp chili powder
1 tsp cumin
½ tsp garlic salt
½ tsp oregano
¼ cup diced drained fresh tomatoes

Directions:
Directions:
Melt together olive oil and butter over medium heat. Add rice and stir and cook for 2 to 3 minutes until thoroughly coated. Stir in chicken broth, tomato sauce and spices and fresh tomatoes. Bring to a boil, stirring well. Reduce heat, add lid and reduce heat to low and cook for about 20 minutes. If rice is not quite tender, replace lid and cook for another 2-4 minutes.
