4 eggs
1 c vegetable oil
2 c flour
2 c sugar
2 tsp cinnamon
2 tsp baking soda
4 c shred carrots
2/3 c chopped nuts
1 c raisins if desired
Directions:
Directions:
Beat eggs until foamy. Add oil in thin stream beat well.

Combine flour, sugar, cinnamon and soda. Add to egg mixture.

Mix well.

Fold in carrots and nuts.

***if adding raisins toss them in a 1 or 2 Tbsp of flour before adding. Doing this will keep them from sinking to bottom of cake.***

Frost with cream cheese frosting
