3-4 pound Pork Belly with skin still attached

Preheat oven to 450º

Score pork belly (Ribbe) skin in a 1 inch cross hatch pattern. Taking care not to cut into the meat. Place the Ribbe in a large, oven safe roasting pan. Add 1-1.5 liters of boiling water. Cover with aluminum foil and bake for 1 hour.

Lower oven temperature to 400º

Remove foil. Crumple up a large sheet of aluminum foil and place it under the Ribbe so that the Ribbe is higher in the center and not in the braising liquid. Bake for 2 hours to obtain a crisp skin.

Place Ribbe under the the broiler for a few minutes to obtain a very crisp skin. Watch carefully!!
