2 lbs. carrots, grated
20 oz. can crushed pineapple, well drained
1 cup raisins
1 cup mayonnaise
1/2 cup powdered sugar

Directions:
Directions:
Wash, peel and grate carrots. Add pineapple and raisins. Whisk together the mayonnaise and powdered sugar. Stir into the carrot mixture, making sure to coat everything well. Serve immediately or chill up to one hour before. Leftovers will have liquid form in the bottom of the bowl. Simply stir it back in before serving a second time. *This recipe can also be halved.
