3/4 cup vinegar
1/3 cup oil
1/3 cup water
1 1/4 cups sugar
2 16 oz. cans each sauerkraut
1 cup diced celery
1 cup diced green bell pepper
1 cup diced green onions'
1 8 oz. can water chestnuts, drained and chopped
2 tablespoons diced pimento, drained
1/4 cups grated carrots

Directions:
Directions:
Combine the vinegar, oil, water and sugar and stir until the sugar is dissolved. Set aside. Chop the celery, bell pepper, onion, water chestnuts and grate the carrot. Stir all these vegetables, along with the sauerkraut and pimentos into the dressing. Chill overnight. This will keep well in the refrigerator.
