2 tablespoons butter
1/2 cups onion, chopped
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups milk
8 oz. shredded Swiss cheese
1 lb. frozen broccoli and cauliflower, cooked and drained
about 24 Ritz crackers, crushed

Directions:
Directions:
Preheat oven to 350º. Spray a 8 X 8 inch casserole dish with cooking spray; set aside.
In a medium saucepan, saute' the onions for about one minute. Gradually add the milk, whisking constantly. Cook until the mixture is bubbly and thick. Remove from the heat. Add half of the cheese, stirring to melt. Gently fold in the cooked vegetables. Spoon the mixture into the casserole dish. Sprinkle with the remaining cheese and top with the crushed crackers. Bake for 20 minutes until it's heated through and bubbly.
