Preheat oven to 400º.

1 1/2 Lb. pork loin
1 tsp. salt
1 tsp. pepper
1 tsp. garlic powder
1 tsp. cumin
1 tsp. paprika
1 tsp. onion powder
1 tsp. thyme
1 tsp. oregano
1 tsp. chili powder
1 tsp. Olive oil
Mix all ingredients together then rub all over loin and brown in cast iron skillet.


GLAZE:
1 tsp olive oil
1/2 cup minced onion
2 Tbsp. fruit preserves-apple or plum-your choice
2 Tbsp. balsamic vinegar

Mix together all glaze ingredients and rub all over the loin.
Bake until inner tempurature reaches 170º.
