3-4 lbs Sirloin Tip
2 T Pickling Spice
1 T Salt
1/2 T Pepper
1 Onion
3 C Apple Cider Vinegar
3 C Water

SAUCE
8-10 Ginger Snaps
3/4+ C sugar

DUMPLINGS
5lbs potatoes
1 XL or 2 small eggs
2 handfuls homemade bread crumbs
1-1/2 C flour
1T salt

Directions:
Directions:
Cube beef, place in large pot
slice onion into rings, add to pot
place 2 T pickling spice into cheese cloth pouch, add to pot
Add 3C apple cider vinegar and 3 C water to pot, if meat isn't covered, continue to add equal parts vinegar and water.
Add 1 T salt and 1/2T pepper
Bring to a boil, cook until meat is tender, may take 60-90 minutes or more.

Peel potatoes and slice into discs, add to salted boiling water and cook until soft, remove from stove and drain really well. Rice potatoes and leave in bowl until they reach room temp. Once cool, add 2 small eggs or 1 xl egg, 2 handfuls of breadcrumbs 1t salt and 1-1/2 C flour, mix until no longer sticky. You may need to add more bread crumbs of too sticky. Drop dumplings into boiling water, once they come to the top they're done. Remove from water and continue with additional dumplings.

Once meat is tender, remove from pot.
Blend gingersnaps to dust, add water to make thin paste, add to beef water, add sugar to taste (3/4C per Miss Anita)
Add meat back into sauce.

Serve dumplings with gravy and chunks of beef.
