5 C warm water
2 cakes yeast
3 T honey
3 C whole wheat flour
4 C unbleached flour
1/4 C wheat germ
1/4 C soy flour or powder
3/4 C non1fat dried milk
4 tsp salt
2 T salad oil or butter

Directions:
Directions:
1. In a larger mixing bowl combine the water, yeast and honey.
2. Let stand for 5 minutes.
3. Measure and sift the whole wheat and unbleached flour, wheat germ, soy flour, and dry milk.
4. Stir the yeast mixture and while stirring add the salt and 3 cups of the flour mixture.
5. Beat 75 strokes of 2 minutes with an electric mixer.
6. Add the oil and 3 cups of the flour mixture and turn out on a well floured bowl, adding flour as needed.
7. Knead throughly (10 minutes) till dough is smooth and elastic.
8. Place in a well oiled bowl (swish it around) abs let rise until double (1 hour).
9. Punch dough down, knead for 10 minutes.
10. Let rise for 40 minutes. Flatten it out.
11. Shape into 2 loaves. Place in greased 9x5 pans. Cover.
12. Let rise until double (30 minutes).
13. Bake at 350 degrees for 50-60 minutes.
