4 cups chopped zucchini
1 cup chopped onion
1/2 tsp salt
1/4 tsp pepper
3 TBS butter
2 eggs beaten
1 cup shredded sharp cheddar cheese
1 1/2 cups saltine cracker crumbs
1 tsp horseradish
1 can cream of mushroom

Directions:
Directions:
Cook zucchini and onion in small amount of water until tender. DO NOT DRAIN. Add all ingredients together, saving 1/2 cut cracker crumbs for top. Put in greased casserole dish. Bake at 375º for 1 hour.

This recipe came from Janessa’s Grandma Jo. Her sister Sue had given to her. Good way to use up some zucchini.
