3 ½ Cups Flour
2 Cups Packed Dark Brown Sugar
⅔ Cup Sugar
2 Cups Pumpkin Puree
1 Cup Vegetable Oil (or ½ cup + ½ cup applesauce)
⅔ Cup Coconut Milk
2 tsp Baking Soda
1 tsp Nutmeg
1 ½ tsp Cinnamon
⅔ Cup Flaked Coconut (optional)
1 Cup Toasted Walnuts (optional)

Directions:
Directions:
Preheat the oven to 350º F. In a large bowl combine the flour, brown sugar, white sugar, pumpkin puree, oil, coconut milk, baking soda, nutmeg, and cinnamon. Mix until all of the flour is gone. Fold in the nuts and flaked coconut. Pour batter into greased mini-muffin pan(s). Bake for 13 min or until a toothpick inserted in the center comes out clean. This makes a lot of muffins and they freeze very well.
