1 - 2 pounds of carrots, peeled

Miso Glaze:
4 tablespoons butter
2 tablespoons honey
2 tablespoons white miso
1 teaspoon of rice wine vinegar
Green onion sliced on the bias for garnish

Maple Glaze:
3 tablespoons butter
2 tablespoons honey
1/4 teaspoon smoked paprika
sea salt and pepper

Carrots Vichy
75 grams butter
15 grams white sugar
5 ml salt
White pepper to taste
Chopped parsley leaves to taste

Directions:
Directions:
Peel and trim the carrots.

Bring a medium saucepan with salted water to boil and add in carrots. Cook until tender.

In a separate pot or fry pan, melt the butter and add other glaze ingredients stirring to mix. Toss the cooked carrots in the glaze.

For the Miso or Mape glaze, you may also want to spread the glazed carrots on a parchment lined baking sheet and cook in a hot convection oven (450 degrees) for 10 minutes to brown before serving.

I have used carrots in these recipes but you can use any root vegetables or mix of vegetables: parsnips, turnips or a medley. The glaze is equally good on sliced squash which can be baked with the glaze.
