1 head or bag of room temp curly kale (remove and discard all stems)
1 package of Trader Joe's quick cook farro
1/2 thinly sliced shallot
1 large sweet potato peeled and cubed
3 chicken breasts
1 apple quartered and cubed (fuji or cosmic vibes)
1/2 cup Roughly chopped Trader Joe’s candied pecans
4 oz. Crumbled Goat Cheese
Salt and Pep

Spice Mix:
1 tsp Smoked Paprika
1 tsp Onion Powder
1 tsp Dried Thyme
1 tsp pepper
1.5 tsp salt
Pinch of Cayenne Pepper

Salad Dressing:
1 tsp dijon mustard
1 tsp whole grain mustard
1 TBL maple syrup
2 TBL apple cider vinegar
2 TBL olive oil
Salt and Pep

Directions:
Directions:
Preheat oven to 425 degrees.

Add cubed sweet potatoes to a lined baking sheet with a drizzle of olive oil and some of the spice mix (measure with your heart). Roast in oven for about 25 minutes or until the potatoes are tender and start to char.

Season chicken with spice mix and add a drizzle of olive oil. Add to lined baking sheet and roast for 15-20 min or until internal temp is 165 degrees. Let rest 5-10 minutes and cut into cubes.

Cook farro according to directions.*Tastes even better if cooked in chicken stock or broth!

Add kale to bowl with a TBL of dressing and massage. Add the rest of the ingredients on top, toss and serve!

You can pop the leftovers in the microwave for about 40-50 seconds to take the chill off.
