Ingredients:
Ingredients:
1.5 cups of flour
1 tsp. baking soda
1 tsp. salt
3 cups Old Fashioned Oatmeal
12 oz semi-sweet chocolate chips
1 cup butter
1 cup light brown sugar
1 cup white sugar
2 eggs
1 tsp vanilla

Directions:
Directions:
1. Preheat the oven to 350. Take the butter out of the fridge about 30-45 min before you plan to bake. (This is important to get the right consistency. You don't want the butter to be too hard to blend, but you don't want it to be too melted either.)
2. Mix flour, baking soda, and salt in a small bowl.
3. In a separate bowl, blend the butter, sugars, eggs and vanilla until well-mixed.
4. Add the flour/baking soda/salt mixture to this bowl and blend well.
5. Gradually fold in oatmeal.
6. Then gradually fold in chocolate chips.
7. Shape into balls around the size of a ping-pong ball.
8. Bake for ~10-12 min. Be sure to watch the oven; cookies are done when they are golden brown. Let them sit on the baking sheet for an additional 2-3 min after pulling out of the oven so the cookies can set-up, but be sure to remove them and place on a cooking rack pretty quickly so the cookies don't stick to the cookie sheet.

Personal Notes:
Personal Notes:
This was my aunt's recipe that she made every Thanksgiving for as long as I can remember. Sometime in my teen years, I took over the duty of baking dozens of these cookies for my big Irish family. I hope your family loves them as much as mine does!
