1 lb. pea beans
1 tsp salt
¼ baking soda

small piece of salt pork
6 to 8 oz. molasses
6 oz. hot water
1 tsp. salt
dash pepper
½ tsp. dry mustard

small onion

Directions:
Directions:
Soak 1 lb. pea beans overnight in warm water. Next day rinse beans, then cover with water.

Add 1 tsp salt and ¼ tsp. baking soda. Boil until soft and cracked, ¾ to 1 hour.
Rinse with hot water. Put a small piece of salt pork into the bottom of a crock pot.
Add rinsed beans.
Stir together 6 to 8 oz. of molasses, 6 oz. hot water, 1 tsp. salt, dash pepper, and ½ tsp. dry mustard. Pour over beans. Put a small onion on top. Let cook for 6 to 7 hours on low.

This is a staple in our house. The most used recipes are the dirtiest, splattered with ingredients. This is one of those recipes. Dad and I both like to make this one. It came from Marie Dower, a co-worker at Star Market.
