1/2 cup water-110º
2 1/4 tsp. yeast
1 Tbsp. honey
Stir and let bloom, about 5 minutes

1 2/3 cup warm water

Sift together:
4 cups flour
1 tsp. salt

Directions:
Directions:
In a stand mixer with the bread hook on, mix together: Yeast mixture, butter, flour mixture.
Then alternate mixing 1/2 cup water the 1/2 cup of flour.
After all is mixed.
Knead for a few minutes minutes.
When finished kneading.
Place in oiled bowl rolling it over several times to make sure all sides are coated in oil, then cover with a damp cloth.
Place in a warm place away from drafts until double in size.
Preheat oven to 350º.
After the rise remove the cloth and put on a floured surface and fold outside in several times(no less than 10 times).
Shape into 8 balls and pat flat and then let rise 35 minutes.
Brush with melted butter and sprinkle sesame seeds (optional).
Place parchment paper on a cookie sheet.
Place the 8 buns on the cookie sheet and bake for 20-30 minutes.
Smaller buns will take less time to bake.
