- 250g Cream Cheese (room temperature)
- 100g Sugar
- 2 Large Eggs
- 1/2 cup Heavy Cream (Whipping Cream is also a good substitute instead of heavy cream)
- 1 Tbsp Flour (OPTIONAL)
- 1 Tsp Vanilla Extract (OPTIONAL)
- Pinch of Salt

1. Preheat oven to 220°C / 430°F

2. In a bowl, combine cream cheese and sugar. Use a kitchen mixer to beat them together until smooth

3. Add the eggs one at a time and slowly mix

4. Once those steps are completed, pour in the cream, vanilla, and salt. Beat together until it becomes smooth
(Sift in flour to the batter if preferred. Add flour if you want a more firm texture)

5. Prep the ramekins and place parchment paper over top

6. Pour your cheesecake batter into the ramekins and leave at least 1/2 inch of space at the top

7. Bake them for 30-35 minutes or until it’s deeply golden brown and slightly jiggly

8. Once they are baked, let them cool for AT LEAST 2 hours. It’s more preferred to chill overnight for a more cohesive, creamy texture

- For a more creamy texture, make sure to use a full-fat cream cheese

- Don’t forget to add a pinch of salt to enhance the flavour

- Serving while warm works, but it’s more preferred to chill overnight for a more creamy texture
