Smokey Red Beans

1 lb. small red beans sorted, rinsed, & soaked.
2 tsp. liquid smoke (or more to taste)
1 tsp. olive oil
3 large onions, chopped
4 garlic cloves minced
2 bay leaves
1/2 tsp. cayenne
1 tsp. dry thyme leaves
1/2 tsp. black pepper
5 cups water

In large non stick pan cook onion & garlic in oil
until limp. Drain beans & combine in large pot
with cooked vegetables & remaining ingredients.

Bring to a boil; reduce heat, cover, & simmer,
stirring often, until beans are tender
(about 1 1/2 2 hrs.)
