Low Fat Italian Sausage Soup


2 large onions chopped
2 cloves garlic
1 medium bell pepper seeded & chopped.
5 cups beef broth
1 lb. low fat Italian sausage cooked & drained.
1 1/2 cups dry red wine
1 can 28 oz. Italian style tomatoes
1 Tbs. dry basil
1 tsp. sugar
2 medium zucchini cut in 1 inch slices
2 cups uncooked bow tie pasta
1/4 cup dry parsley



In 5 6 qt. pan combine onions, garlic, &
pepper with 1 cup broth. Boil, stirring
occasionally until liquid evaporates.

Deglaze pan by adding 3 Tbs. water.
Repeat 3 times.

Adding remaining ingredients including remaining
4 cups of broth. Bring to a boil Cover to simmer
15 min. or until pasta is tender to bite.
