12 eggs
24 ounces (3 cups) cottage cheese
1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
½ tsp salt
¼ tsp black pepper

Optional: ½ cup cooked, crumbled bacon or sausage

Directions:

Preheat oven to 375º. Generously spray a 9X13 inch baking dish with non-stick cooking spray.

In a large bowl whisk together the eggs, cottage cheese, shredded cheese, salt and pepper. If using, stir in the cooked bacon or sausage until evenly distributed.

Pour the egg mixture into the prepared baking dish. Bake for 20-28 minutes, or until the edges are golden and the center is set or no longer jiggly. The casserole may puff up in the oven but will settle as it cools.

Allow the casserole to cool slightly before serving.
