1 lb. shrimp, peeled and deveined
6 slices bacon, chopped
4 tsp. lemon juice
2 T. chopped Italian parsley
1 c. thinly sliced scallions
2 large garlic cloves, minced
Cheesy Cauliflower "Grits"
32 oz. frozen cauliflower rice, or 1 large head of cauliflower
2 T. heavy cream, more to taste and to aid in blending
1 T. butter
1/4 tsp. garlic powder
2 oz. sharp cheddar cheese, more to taste and thicken as needed
salt and pepper to taste

1. Clean and trim the cauliflower, breaking it into medium sized pieces if using a head. Place in a microwave safe bowl and cook, uncovered, on high 10 minutes. Stir in cream, butter and garlic and continue to cook until largest florets are fork tender (5-10 minutes depending on microwave wattage.)
2. Use an immersion blend to puree the cauliflower, add cheese and continue to puree. (If you don't have an immersion blender, puree cauliflower in a food processor or blender.) Season with salt and pepper to taste.
3. Cook bacon in a large skillet until bacon is browned and crisp. Remove bacon. Add the chopped green pepper and sauté until tender. Add shrimp and cook until they turn pink and are opaque, about 2-3 minutes. Add garlic and cook for 1 minute, then stir in lemon juice, cooked bacon, parsley, and scallions and sauté for another 3 minutes. Serve shrimp over cheesy cauliflower. Serves 4.

When I don't have bacon in the house, I'll heat precooked bacon bits in 1-2 T. olive oil in the skillet to season the oil with the essence of bacon. I've also substituted shallots or onion for the scallions, sautéing them with the green pepper.
We actually prefer my cheesy cauliflower "grits" to regular grits, and I serve them in many other ways...I blister cherry tomatoes with garlic in olive oil and spoon the tomatoes over the "grits" for a cheesy tomato dish.
