8 oz Vermicelli pasta, boiled and drained
1/4 cup butter, melted
3 cup sour cream
2 10oz packages chopped spinach cooked and drained
1 can diced green chilis
1 1/2 bunches green onion
1 lb monterey jack cheese shredded/grated
1 tsp pepper
6 boneless, skinless chicken breasts, cooked and chopped

Directions:
Directions:
Mix all ingredients in large bowl and pour into two casserole dishes. Cook covered at 350 degrees for 30 to 40 minutes. May freeze one casserole for later or give away. You can also make one casserole using half the ingredients, but easy to make two at once.

I used to bring this to friends who had just had a baby or if someone was sick or recovering from surgery. Super easy to reheat and really delicious!
