2 boneless, skinless chicken breasts
2 tablespoons soy sauce
2 tablespoons honey
1 tablespoon oil
1 tablespoon ketchup
1/2 tsp ground ginger
2 Tablespoons apricot preserves

Directions:
Directions:
Mix all ingredients in a square pan or baking dish and add chicken breasts. Scoop the sauce so it covers chicken and bake at 375 for 45 minutes uncovered. If the pan is too big, the sauce will dry up so use the right size for the amount of chicken you're baking.
Tip: double or triple the sauce for sure and can easily use 4 chicken breasts. I liked to serve with rice and veggies.

I used to make this when my kids were little and they both liked it. I got the recipe from Sharon Lacey, one of the moms in our playgroup when they were little.
