3 - 4 mashed very ripe bananas
1 cup sugar
2/3 stick melted butter
1 egg
1-and-a-half cups flour
1 teaspoon baking soda
dash of salt
1 cup chopped nuts (optional)

Directions:
Directions:
Mix together mashed bananas, sugar, melted butter and egg.
Sift in flour, baking soda and salt. Add nuts if desired and blend with wooden spood, just until mixed. Bake in greased loaf pan in 350-degree oven for 1 hour.

I usually made it plain. Once in awhile I added nuts and on a rare occasion, chocolate chips - but I like it plain best.

Whenever we have extra bananas, I let them fully ripen and then freeze them in bags. Easy to have on hand and defrost and peel when you feel like making banana bread!

This was my mother-in-law's recipe (Colton and Caroline's grandmother "Mimi" on their dad's side). She made this banana bread recipe when I visited her in college and it was so good and easy, I have made it ever since! I like to serve it warm with butter. I've made it for my kids their entire lives.
