3-4 lb. beef chuck roast
1 t. salt
¼ t. pepper
2 T. shortening
2 T. brown sugar
1 ½ t. dry mustard
1 t. paprika
½ t. chili powder
1 (15 ½ oz.) can chili style beans in chili gravy
¾ c. chopped onions
1 T. all purpose flour

Season chuck roast with salt and pepper. In Dutch oven, brown meat on all sides in hot shortening. Combine brown sugar, mustard, paprika, and chili powder. Rub over surface of meat. Top with beans and onion. Cover and bake in 350º oven for 2 to 2 1/2 hours or till tender. Remove roast and beans to warm serving platter. Skim off fat. Add enough water to pan drippings to make 1 cup liquid. Combine flour with 2 tablespoons water. Add pan juice; cook till bubbly. Pass gravy.
