2 Tbsp. butter
½ Cup onion, chopped
1 Clove garlic, minced
2 Tbsp. all-purpose flour
1 Tsp. salt
½ Tsp. garlic powder
1½ Cups whole milk, room temperature
2 Russet potatoes, peeled and very thinly sliced
1 Cup shredded Cheddar cheese
Garnish: Paprika

Melt butter in a Dutch oven over medium heat. Cook onion for 5 minutes, or until softened. Add garlic; cook for one minute. Sprinkle with flour and seasonings; cook and stir until thickened and lightly golden. Gradually whisk in milk; bring to a boil. Layer potatoes in pan. Reduce heat to medium-low. Cover and cook for 15 to 20 minutes, until potatoes are fork- tender, stirring often. Add cheese; stir until melted. Dust with paprika.

The key to this dish is slicing the potatoes extra thin. If you don't have a mandoline, just use a sharp knife.
