1 Tbsp. olive oil
1 Lb boneless, skinless chicken thighs, cubed
½ Cup onion, diced
1 Cup red pepper, sliced
1 Cup pineapple cubes
10-Oz. bottle sweet-and-sour sauce
2 Cups cooked rice

Directions:
Directions:
Heat oil in a skillet over medium heat; add chicken and cook through. Add onion, red pepper and pineapple; mix well. Add sauce; lower heat to medium-low. Simmer for 5 minutes, or until vegetables are crisp-tender. Serve over cooked rice.

This easy meal is ready in about 20 minutes and is a great way to add variety to everyday meals. It's even more delicious if you can use fresh pineapple. Change it up with a pound of uncooked shrimp instead of chicken.

The secret to tender steamed rice! Cook long-cooking rice according to package directions. When it's done, remove pan from heat, cover with a folded tea towel and put the lid back on. Let stand for 5 to 10 minutes before serving. The towel will absorb any excess moisture.
