1 lb. salmon filet, no skin and thick center cut if possible
1/4 c. Bachan's Japanese Barbecue Sauce
1 T. rice vinegar
1 T. brown sugar
Garnish:
1-2 green onions, sliced diagonally
toasted black and white sesame seeds

1. Mix barbecue sauce, vinegar and brown sugar in a medium size bowl. Cut salmon into bite size pieces and place in bowl with marinade. Stir to coat all salmon bites. Cover and let marinate for 30 minutes.
2. Line a sheet pan with nonstick foil or parchment paper and place salmon evenly across the pan. Bake 10 minutes in 400º oven. Remove from pan, squirt a little more Bachan's over the top, then garnish with green onions and sesame seeds. Serve immediately. Serves 2-3.
If you want to add a little heat to the salmon bites, put sriracha sauce in the marinade. (I let people put their own sriracha on the bites after baking rather than putting it in the marinade.) Serves 2-3.

I love to serve these bites over a salad or in a bowl with rice and vegetables. I have also made this with chicken bites with excellent results; simply adjust the baking time to ensure chicken is cooked thoroughly.
