Breakfast Hash Brown Casserole Recipe

24 oz. package of shredded hash browns or Simply Potatoes
½ c. melted butter
2 lbs. pork sausage – cooked and drained
½ C. chopped onions
8-10 eggs – beaten
½ tsp. seasoned salt
1 C. milk
1 C. mozzarella cheese – shredded
1 C. cheddar cheese – shredded
7-9 slices white bread – torn into bite size pieces

Spray a 9x13 pan with non-stick cooking spray. Spread the hash browns into the bottom of the pan and pour the melted butter over the top. Bake at 425 degrees for 25 minutes. While the hash browns are baking, brown the sausage with the chopped onions and drain grease well. Mix the eggs, milk, and salt together in a large mixing bowl. Let the hash browns cool and sprinkle the sausage and cheese over the hash browns. Mix the bite-sized pieces of bread with the egg mixture. Pour the egg mixture over the top of the entire pan. Bake at 350 degrees for 40-45 minutes.

This dish was made by a parent at Morton Junior High for a teacher luncheon. It is a great breakfast casserole that has everything in one dish!
