CRUST:
21 chocolate or Oreo cookie wafers
4½ tbl butter, melted
OR
one premade chocolate crust

FILLING:
20 large marshmallows

½ pt. whipping cream, whipped
2-3 tbl. Créme de Menthe
2-3 tbl. Créme do Cacao

Garnish:
fresh mint leaves
chocolate mint candy

Directions:
Crust:
Process cookies, in a blender or food processor, into fine crumbs. Combine crumbs and butter thoroughly and press into a 9" pie pan. Set aside.

Filling:
Melt the marshmallows in the milk on top of a double boiler. Remove and let cool. Stir in Créme de Menthe and Cacao. Fold in the whipped cream. Pour into pie shell and freeze about 5 hours. Garnish with fresh mint sprigs and/or shaved chocolate mint candy.

This recipe could be more minty. You might try increasing the amount of Creme de Menthe. This filling always fills more than one shell. Pour the extra into individual custard cups and freeze. It's good with or without the crust.
