8 large eggs
1 tbs chopped fresh basil
1 tsp dried oregano
3 tbs freshly grated Parmesan cheese
½ tsp salt
⅛ tsp black pepper
¼ cup cooked ham, prosciutto or bacon
1 tbs butter
1 small onion, finely chopped (¼ cup)

Directions:
Directions:
1. Beat all ingredients except meat, butter and onion thoroughly with fork or wire whisk until well mixed. Stir in meat.
2. Melt butter in 10" nonstick skillet over medium high heat. Cook onion in butter, stirring frequently, until slightly tender (4-5min). Reduce heat to medium low.
3. Pour egg mixture into skillet. Cover with lid and cook 9 to 11 minutes or until eggs are set around edge and light brown on the bottom.
