White Sauce:


Ingredients:

1 stick butter
½ c. flour
2 tsp. salt
Dash pepper
Dash paprika
2 c. chicken broth
1½ c. milk and ½ c. cream

Directions:

In medium saucepan, over low heat, melt butter. Stir in flour, salt, pepper, and paprika until smooth. Gradually stir in chicken broth and milk/cream; cook, stirring constantly, until thickened and smooth.
 

Lincoln Logs:


Ingredients:  
Ingredients:  
3 c. diced, cooked chicken (~1½ lbs.)*
1⅔ c. plain, dry bread crumbs
2 c. walnuts (or pecans), chopped
½ c. celery, finely chopped
½ c. onion, finely chopped
1 tsp. salt
½ tsp. paprika

*Rub chicken breasts with olive oil, garlic salt, salt, and pepper. Bake at 425º for 20-25 minutes, depending on thickness.

In large bowl, mix chicken, ⅔ c. bread crumbs, walnuts, celery, onion, salt, and paprika. Moisten with ⅔ c. of the white sauce. Using hands, form mixture into logs 3" long. Roll in remaining 1 c. bread crumbs, and fry in hot oil until crispy, turning once. Place on platter and serve with remaining white sauce.

Dad and I enjoyed making these in the first ten years of our marriage, and then we forgot about them. In 2025 I began making them again. They're just a little different but very tasty, and we're not sure why they are called Lincoln Logs. :)
