1 ˝ c. cooked lobster (other seafood may be substituted)
˝ T. flour
2 T. butter
˝ c. light cream
2 T. sherry
2 egg yolks slightly beaten
˝ tsp. salt
few grains of cayenne pepper

Directions:
Directions:
Melt butter in saucepan. Sauté lobster in butter over low heat in saucepan for 5 minutes.
Add flour -stir in cream and continue to stir until sauce begins to boil.
Stir in sherry and slightly beaten egg yolks.
Cook 10 minutes - add cayenne pepper and a little salt, if necessary.
Garnish. Serve with triangles of toast or on a ring of rice.
If any is leftover, reheat at a very low temperature to avoid curdling.
