1 Dozen Hard-boiled eggs (as many as you want)
Mayonnaise
Dijon Mustard (if you do not have that, use regular mustard)
Paprika (optional)
Salt to taste
Pepper to taste

Directions:
Directions:
Peel the eggs and slice them in half long ways. Put the yolk in a bowl and the white halves on a plate or on a container that can be covered.
Mash the yolks with a fork until they are somewhat smooth.
Add some mustard, mayonnaise, salt and pepper a little at a time while tasting. Once you are satisfied with the taste, scoop the mixture into the egg halves. Then sprinkle with paprika on the top of each egg. chill for at least 2 hours then serve.
