3 eggs
1 c. vegetable oil
2 c. zucchini, peeled and grated
1 c. sugar
3 c. flour
1 tsp. baking soda
1 tsp. salt
½ tsp. baking powder
2 tsp. vanilla extract
1 tsp lemon extract
zest of ½ an orange
2 tsp. cinnamon
1 c. walnuts, chopped

Optional:
½-1 c. raisins

Directions:
Directions:
Preheat oven to 325º. Beat eggs in a large bowl, Add oil, zucchini, vanilla extract, lemon extract, sugar, and orange zest and blend well. Sift dry ingredients together. Add to egg mixture and mix well. Stir in nuts. Put into two well-greased and floured loaf pans. Bake for 1 hour.
