Deep Dish (9 " cast iron fry pan)

315 grams of all purpose flour
1/2 teaspoon of instant yeast
1 teaspoon of salt
250 ml (1 cup) cold water
10 ml of olive oil plus more for the pan

Dough for a sheet pan pizza - less thick
472 gram (3 & 1/3 cups) all purpose flour
1 teaspoon of instant yeast
1.5 teaspoon of salt
375 ml (1 - 1/2 cups) cold water
15 ml olive oil plus more for the pan

Pizza Sauce:
1 jar of passata tomatoes (681 ml)
4 cloves of garlic, microplaned or finely minced
2 teaspoons of oregano
1/2 teaspoon of chilli flakes (optional)
2 teaspoons of basil
2-3 tablespoons of olive oil (or use butter for a less acidic sauce)
1 teaspoon sugar
1 teaspoon salt

Alternatives: use your own pizza sauce or a store bought. You can also make a homemade pesto sauce which is also great on pizza.

In the morning, mix everything together in a bowl to make a shaggy dough. Cover with plastic wrap and let rise at room temperature for 10-12 hours. Alternatively, make the dough the night before, cover and refrigerate for up to 24 hours.

Pizza sauce: Combine oil, garlic, oregano, chilli flakes and heat until fragrant. Add pasta, basil, salt and sugar and simmer for 20 - 30 minutes.

Make your pizza: liberally coat the dough with oil and put some oil on the pan/sheet pan. Press the dough into the pan or spread out onto the sheet pan. Let the dough rest for at least half an hour. Using your finger tips, press in and leave dimples in the dough. Let sit for 15 minutes to rest.

Preheat oven to 500 degrees. Cover the dough with our pizza sauce, spreading the sauce in a thin layer to the edges of the dough and add toppings - two to three at most to get the best flavours.

Bake for 10 minute at 500 degrees then reduce heat to 450 degrees and bake an additional 10 minutes.
