¼ cup unsalted butter
½ cup diced onion
1 cup carrots, shredded and cut into half inch pieces
2 ⅓ cups broccoli florets, or 1 12 ounce bag of frozen broccoli chopped small
1 ½ cups or 1 14 ounce can chicken broth
1 cup milk
1 cup heavy whipping cream
¼ cup all-pupose flour
1½ teaspoons salt
½ teaspoon black pepper
pinch of red pepper flakes
2 cups shredded cheddar cheese

Directions:
Directions:
In a large pot, melt butter at medium-high heat. Add in onions, carrots, and broccoli and cook until softened. Cook more or less depending on your preferences and the size of vegetables.
Slowly add in broth, milk, and cream. Sprinkle with flour and add salt, pepper, and red pepper flakes. Continue stirring and heating until thickened, approximately 10-15 minutes.
Once thickened, add cheese and stir until it is melted, then serve.
