4 lbs. boneless pork loin
1 c. sweet onion, chopped (optional)
1 c. Dr. Pepper No Sugar Added or regular Dr. Pepper
1 c. barbecue sauce

Directions:
Directions:
Brown the pork loin either in the Instant Pot on saute' or in a skillet.
Add onion if using to pork fat. Deglaze the bottom of the Instant Pot if using to sauté.
Mix together the Dr. Pepper, onion, and barbecue sauce in the Instant Pot. Add the pork loin and close the lid. Move pressure release handle to sealing. Cook on Manual or Pressure Cook High Pressure for 100 minutes. You may use Natural Pressure Release for 25 minutes and then ensure the rest of the press releases before opening the pot. Remove the meat and shred. You may want to use some of the sauce for moisture.

I often make this and freeze portions for quick meals. We like pulled pork and macaroni and cheese on slider buns brushed with honey, dry mustard & butter. We also use it for pulled pork nachos on tortilla chips or waffle fries.
