12 pieces bacon
1 lb ground beef
1 lb ground deer (or other wild game)
2 yellow onions medium-sized, diced
4 cloves minced garlic (or 2 tsp)
2 tsp ground cumin
1 tsp cayenne pepper
2 tsp smoked paprika
1 tsp ground coriander
48 oz canned diced tomatoes
15 oz red kidney beans
15 oz white cannellini beans (navy beans)
1/2 cup Wild Turkey Bourbon
1/2 cup REAL maple syrup
Salt & Pepper to taste

1. Place a large pot over medium-high heat. Add the bacon pieces and saute until crisp. Using a slotted spoon, scoop up the bacon pieces and drain on a paper towel. Set aside.
2. In the large pot, add the ground meats to the bacon fat. Break the meat apart with a wooden spoon.
3. Add the onions. Cook 6-8 minutes until the onion becomes translucent, stirring occasionally. Meats should be cooked through.
Add the cumin, cayenne, smoked paprika, ground coriander, salt, and black pepper. Cook 1 minute, stirring often.
4. Add the diced tomatoes, beans, bourbon, and maple syrup. Stir well. Bring to a boil.
5. Reduce the heat to low or medium-low and cover. Simmer for 30 minutes, stirring occasionally.

Can be prepared/cooked as instructed or slowly in a crockpot on low for 4-6 hours.

With this recipe, Naomi won the 1st Place Ribbon at the Westend Volunteer Fire & Rescue Chili Cook-off in DeBorgia, Montana in Fall of 2023 and the 2nd Place Ribbon at The Hideout Chili Cook-off in DeBorgia, Montana in Fall of 2024. She served it with homemade cornbread waffles (Mickey Mouse-shaped) just for added fun.
This recipe has been adapted for use with the freshest ingredients... family-raised beef, hunted big game, locally-raised hog, along with garlic, onion, and tomatoes straight from the garden.
