- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese (optional)

1. Heat olive oil over medium heat in a medium saucepan. Add the finely chopped onion and sauté for 3-4 minutes until it becomes translucent.
2. Add minced garlic to the pan and cook for another 1-2 minutes, ensuring it doesn’t burn.
3. Stir in the orzo pasta, toasting it for about 2 minutes until it achieves a light golden hue.
4. Incorporate the vegetable broth, dried thyme, dried oregano, salt, and black pepper. Bring the mixture to a boil, then lower the heat, cover the pan, and let it simmer for 10-12 minutes until the orzo is tender and the broth is absorbed.
5. Once done, remove from heat and use a fork to fluff the orzo. Mix in the fresh parsley and, if desired, the grated Parmesan cheese.
6. Serve warm, either as a flavorful side or a light main dish.
