2 Idaho potatoes – peeled and cubed
1 sweet onion – diced
1 red bell pepper - diced
1 lb. thick cut bacon – reserve 1½ T. of grease
2 bags frozen corn (19 oz bags) – or 4 ears of corn – cooked and cut off the cob
3 cans creamed corn
2 C. chicken broth
2 C. milk
Salt and pepper to taste

Cook bacon in microwave until crisp. Crumble bacon and set aside. Sauté chopped onion and red bell pepper in 1 ½ T. of bacon grease. Cook corn in microwave as directed on package. Boil cubed potatoes until tender. Add corn, creamed corn, milk, and chicken broth to a large stock pot. Add bacon, potatoes, onions, and peppers. Add more milk and chicken broth as the soup simmers until desired consistency if needed. Let simmer on the stove or in a crockpot. Add salt and pepper to taste.
