8-10 slices of bacon – fried crisp and diced
1 stick butter
1/3 C. flour
4 C. milk
3-4 potatoes – baked, peeled, and cubed
4 green onions – chopped
1 C. cheddar cheese – shredded
1 C. sour cream
1 tsp. salt
1 tsp. pepper

Directions:
Directions:
In a large stock pot, melt butter on low heat. Whisk in flour until smooth. Gradually add milk, whisking constantly until well blended. Add potatoes and onions. Bring to a boil and reduce heat. Simmer for 10 minutes. Add bacon, cheese, sour cream, salt, and pepper. Stir until cheese is melted.

I especially like making this soup in the fall using potatoes and onions from my garden. I found this recipe in Karen Doughty’s cookbook, Food for the Hungry Soul. She gave every woman at Glad Tidings a copy of her cookbook and it has become one of my go to cookbooks.
