"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

12-16 oz. bacon
1 stick (or ¾ stick) butter
½ gallon of whole milk
Instant potato flakes
salt and pepper to taste

Directions:
Peel and dice potatoes. Boil potatoes in a large stock pot until done but do not overcook. Remove the potatoes from heat before they become mushy. Drain water from potatoes. Cut bacon up into small pieces. Fry bacon in a skillet until crisp. Put the bacon and bacon grease in the stockpot with the potatoes. Add butter. Add at least a ½ gallon of whole milk to the potatoes. Gently stir and bring to a boil. Add instant potato flakes to thicken until desired consistency. If the soup gets too thick, just add more milk. Add salt and pepper to taste. It will need quite a bit of salt.
