1 lb. fresh mushrooms, sliced
1 long pkg. saltines (4 oz.)
1/2 c. chopped green peppers
1/2 c. chopped celery
1/2 c. chopped onions
1/2 c. real mayonnaise
salt & pepper to taste
2 eggs
1 c. milk
1 can cream of mushroom soup, undiluted
1/2 c. shredded cheddar cheese
butter

Directions:
Directions:
Crush saltines to fine crumbs. Put half of the saltine crumbs in the bottom of a greased casserole dish and dot with butter. Sauté mushrooms in butter just until they begin to smell. Mix mushrooms, celery, green peppers, onions and mayonnaise and pour over crumbs. Sprinkle rest of saltine crumbs over mixture and dot with butter. Beat eggs, add milk and pour over crumbs. Refrigerate at least 1 hour or overnight. Before baking, spread mushroom soup over the top of mixture. Bake 50 minutes at 350º. Sprinkle cheese over the top and return to oven for 10 more minutes.
