2 Cup Molasses
1 cup shortening
1 tbsp Ginger
1 tsp salt
8/10 cups flour
1 tbsp baking soda (dissolved in 1 tbsp hot water
1 cup sugar
2 eggs
1 tbsp cinnamon
1 cup cold coffee

Directions:
Directions:
Mix ingredients as listed, starting with flour and then add other ingredients.

May add flour until medium stiff dough

Dough will roll better if it has set in the refrigerator for some time.

Roll on floured surface and cut to shape.

Cook at 350º for 8-10 min depending on thickness of cookie.
