Squash Casserole Recipe

3 lbs. yellow squash, sliced
5 tbsp. margarine, divided
1 small onion, chopped (approx. ½ cup)
1 cup sharp cheddar cheese, shredded
2 large eggs, lightly beaten
¼ cup Dukes mayonnaise
2 tsp sugar
1 tsp salt
20 round ritz crackers, crushed (1 sleeve)

Directions:

Boil squash in a large skillet for 8-10 min or until tender. Drain well and gently press between paper towels.

Melt 4 tbsp margarine in skillet over medium-high heat; add onion and sauté for 5 min or until tender.

Remove skillet from heat and stir in squash, cheese, eggs, Mayo, sugar and salt.

Spoon into a casserole dish.

Melt remaining margarine (1 tbsp) and stir in crushed crackers. Sprinkle evenly over top of casserole

Heat over to 350º F and bake for 30-35 min.
